Baked Omelets

Once again, I was inspired by something I saw on Pinterest.  Baked Omelets.



I did well last year, have lost 60 lbs now.  Yay!  And I intend to finish off the loss this year and be in shape.  I did splurge a bit over Christmas, but it's time to get back on course and I used the above inspiration for breakfast this morning.  We had carnitas for supper last night, so I used similar ingredients for my baked omelet.

Mine included two eggs, cilantro, roma tomatoes, onion, jalapeno, salt, and pepper.

Once baked, I topped with some leftover guacamole.  Yum!
I confess to over cooking.  The premise of doing the baked omelet is to still have a runny yoke, which I love.  But, I depise runny whites.  I baked about 20 minutes at 375, so need to knock that time down a bit.  Even with firm yokes, I really enjoyed my breakfast.

I made some for the kids, and topped theirs with cheese.

I was baking some biscuits in the oven while preparing the omelets.  After baking, I topped the kids' with a biscuit.
I really like the idea that I could prepare these the night before, while making supper.  Then just pop them in the oven in the morning.  Also, one could use quite a bit of variety.  Later this week, I intend to make one using some stirfry veggies from the freezer.  This is definitely a great breakfast option for me.

Pinspiration

I've been pinspired the past few weeks.  Here are some of my creations.

First, do you remember these cute pinwheel cookies I previously attempted?



The dough was gooey and didn't work out just right.  So, I tried again, with my old fashioned cookie dough recipe.  Here they are again....

My red certainly isn't as vibrant, not sure how to achieve that bright of a red without adding so much color that it bitters the taste.  Any ideas?

One of our favorite cookies this Christmas were these Chocolate Peppermint Sandwich Cookies.  Oh Yum! They were even better the next day and so appreciated, the kids asked me to make more when they ran out.  I did make the mini cookie sandwiches, nice bite size deliciousness.


Here are my helpers.  Kristy was piping the filling on the cookie, Nate was adding the top cookie, and Matt was rolling the edges in colorful sprinkles.
Not the best photo, but the only close up I have.  I repeat...these were yummy!



Here are a couple photos of mine.

You need to use 100% cotton yarn for dishcloths. I used this Sugar 'n Cream, 2.5 oz.  I was able to get about 2 1/2 dishcloths from this skein.

I did use some different ribbons to tie the, some rafia, and added some homemade tags. Just didn't take time to photograph those.

I was allowed to have it a couple days before Christmas.  It has already seen a good bit of use and I LOVE IT!
That will be a wrap for today.  I've been out of blog land for a few weeks now.  Been so busy and took a break.  I have some other things to share and catching up today, especially on reading some blogs.  For now, I hope everyone has enjoyed a joyous start to their new year.
