Baked Omelets

Once again, I was inspired by something I saw on Pinterest.  Baked Omelets.



I did well last year, have lost 60 lbs now.  Yay!  And I intend to finish off the loss this year and be in shape.  I did splurge a bit over Christmas, but it's time to get back on course and I used the above inspiration for breakfast this morning.  We had carnitas for supper last night, so I used similar ingredients for my baked omelet.

Mine included two eggs, cilantro, roma tomatoes, onion, jalapeno, salt, and pepper.

Once baked, I topped with some leftover guacamole.  Yum!
I confess to over cooking.  The premise of doing the baked omelet is to still have a runny yoke, which I love.  But, I depise runny whites.  I baked about 20 minutes at 375, so need to knock that time down a bit.  Even with firm yokes, I really enjoyed my breakfast.

I made some for the kids, and topped theirs with cheese.

I was baking some biscuits in the oven while preparing the omelets.  After baking, I topped the kids' with a biscuit.
I really like the idea that I could prepare these the night before, while making supper.  Then just pop them in the oven in the morning.  Also, one could use quite a bit of variety.  Later this week, I intend to make one using some stirfry veggies from the freezer.  This is definitely a great breakfast option for me.

  1. What a great idea. My kids love, love, love omelets and it's really only my husband that can make them the best. They always ask for them on a weekday when breakfast is rather rushed. This would be a great alternative. Thank you for the awesome idea and to Pinterest! I like all parts of my eggs firm - nothing runny for me. LOL

  2. Forgot to add kudos on the weight loss!!! I hope to shed a few myself this year. I went to step on the scale yesterday and it gave me Lo -- so I wondered if it was trying to tell me LOL at my weight. Guess I need to get a new battery.

  3. I've seen these and was thinking about giving it a try. Right now I am trying to find quick, healthy and easy food ideas for the next several months. I noticed how well you have been doing with your weight and I am so happy for you. Hopefully I can do the same with my baby weight. Hugs! Miss you!
