A friend requested this recipe, which used to be on my old blog. Thought I'd share here and I'll send her the link. Below is the recipe for the crockpot. I also make this in a large roasting pan in the oven sometimes.
Pork Roast and Pinto Beans
1 lb dry pinto beans
Pork Roast
1 medium onion
3 garlic cloves
1 sm. can green chiles
Adobo
2 1/2 TBsp chili powder
2 tsp cumin
1 tsp paprika
1 tsp ground oregano
salt and pepper
Soak pinto beans overnight. Rinse and put into crockpot. Put roast in with beans. Toss in chopped onion, whole garlic cloves, and green chiles. Sprinkle Adobo over top of all. Add water to cover beans. Add chili powder, cumin, paprika, oregano, and sprinkle on some salt and pepper. I cooked on high for about 5 hours, then turned to low for about another 4 hours. Take roast out and shred with fork. Return to pot with beans and mix up. Continue on low a bit longer, until ready to serve.
I served with flour tortillas, shredded cheese, salsa, rice and chips. We have enough leftover for tonight as well. Yum!
